This is an easy, no-cook dessert that is ready quickly. Feel free to add any extract you like to the mascarpone. Almond is a nice variant. If you make the berry compote, you can also add fresh herbs such as mint, thyme, or lavender.
Beat the mascarpone with the cream until very thick. Add the zest, monk fruit, salt, and vanilla and beat again.
Serve the cream with the berries.
Notes
I also like to serve the mascarpone with a berry compote, which is only a little bit more effort.Compote: 1 tablespoons lemon juice (1 lemon) 1 tablespoons monk fruit, granulated splash of vanilla extract pinch of saltCombine the lemon juice, granulated monk fruit, salt, and vanilla. Pour over berries.
