Burgers with Harissa, Feta, and Salad
These burgers are full of flavor thanks to the addition of a few umami-packed ingredients like feta and Worcestershire sauce along with garlic and onion. Gelatin and diced mushrooms help them stay juicy and tender with a beautiful pan sear. Serve them atop a bed of mixed greens, tomatoes, mushrooms and onions with a drizzle of pepper sauce.

Ingredients
Burger
- 10 ounces ground beef lean
- 2 green onions minced, or 1 teaspoon onion powder
- 1 garlic clove minced, or 1 teaspoon garlic powder
- 2 teaspoons gelatin
- 1 tablespoon Worcestershire sauce
- 1/2 tablespoon yeast extract spread
- 1 egg
- 1/2 cup brown mushrooms high vitamin D, minced
- 1/4 cup feta low-fat, omit for dairy-free
- 1 tablespoon harissa omit for nightshade-free
- 1/8 teaspoon pepper fresh ground
- 1/2 cup parsley minced, divided
- 1/4 cup cilantro minced
Harissa Sauce
- 1 tablespoon harissa
- 1/4 cup cottage cheese
Salad
- 2 slices red onion pickled or raw
- 2 cups butter lettuce
- 2 cups baby spinach
- 8 cherry tomatoes quartered
- 4 mushrooms high vitamin D, sliced
- 2 green onions sliced
Instructions
- In a large bowl, combine all burger ingredients except salt. Mix gently and shape into 2 large burgers or 4 smaller burgers.
- Heat a large non-stick pan over medium heat and add a light spray of avocado oil. Cook until browned then flip and continue cooking until golden, and cooked through about 10-15 minutes total.
- While burgers cook, combine harissa and cottage cheese in a high power blender. Add a tablespoon or two of water and blend until completely smooth and you have a spreadable sauce, adding water as needed. Adjust seasoning with salt and pepper, to taste, set aside.
- Combine all salad ingredients and divide between two plates. Serve with the burger and sauce drizzled over the burger and salad.
