These burgers are full of flavor thanks to the addition of a few umami-packed ingredients like feta and Worcestershire sauce along with garlic and onion. Gelatin and diced mushrooms help them stay juicy and tender with a beautiful pan sear. Serve them atop a bed of mixed greens, tomatoes, mushrooms and onions with a drizzle of pepper sauce.
In a large bowl, combine all burger ingredients except salt. Mix gently and shape into 2 large burgers or 4 smaller burgers.
Heat a large non-stick pan over medium heat and add a light spray of avocado oil. Cook until browned then flip and continue cooking until golden, and cooked through about 10-15 minutes total.
While burgers cook, combine harissa and cottage cheese in a high power blender. Add a tablespoon or two of water and blend until completely smooth and you have a spreadable sauce, adding water as needed. Adjust seasoning with salt and pepper, to taste, set aside.
Combine all salad ingredients and divide between two plates. Serve with the burger and sauce drizzled over the burger and salad.
