Burgers with Harissa, Feta, and Salad

These burgers are full of flavor thanks to the addition of a few umami-packed ingredients like feta and Worcestershire sauce along with garlic and onion. Gelatin and diced mushrooms help them stay juicy and tender with a beautiful pan sear. Serve them atop a bed of mixed greens, tomatoes, mushrooms and onions with a drizzle of pepper sauce.

Ingredients

Burger

  • 10 ounces ground beef lean
  • 2 green onions minced, or 1 teaspoon onion powder
  • 1 garlic clove minced, or 1 teaspoon garlic powder
  • 2 teaspoons gelatin
  • 1 tablespoon Worcestershire sauce
  • 1/2 tablespoon yeast extract spread
  • 1 egg
  • 1/2 cup brown mushrooms high vitamin D, minced
  • 1/4 cup feta low-fat, omit for dairy-free
  • 1 tablespoon harissa omit for nightshade-free
  • 1/8 teaspoon pepper fresh ground
  • 1/2 cup parsley minced, divided
  • 1/4 cup cilantro minced

Harissa Sauce

  • 1 tablespoon harissa
  • 1/4 cup cottage cheese

Salad

  • 2 slices red onion pickled or raw
  • 2 cups butter lettuce
  • 2 cups baby spinach
  • 8 cherry tomatoes quartered
  • 4 mushrooms high vitamin D, sliced
  • 2 green onions sliced

Instructions

  • In a large bowl, combine all burger ingredients except salt. Mix gently and shape into 2 large burgers or 4 smaller burgers.
  • Heat a large non-stick pan over medium heat and add a light spray of avocado oil. Cook until browned then flip and continue cooking until golden, and cooked through about 10-15 minutes total.
  • While burgers cook, combine harissa and cottage cheese in a high power blender. Add a tablespoon or two of water and blend until completely smooth and you have a spreadable sauce, adding water as needed. Adjust seasoning with salt and pepper, to taste, set aside.
  • Combine all salad ingredients and divide between two plates. Serve with the burger and sauce drizzled over the burger and salad.
