Blueberry Mousse

Sweet and tart, blueberry mousse makes an easy keto dessert.

Ingredients

  • 2 cups blueberries
  • 1/3 cup granulated monk fruit
  • 1/8 teaspoon salt
  • 1 cup sour cream
  • 8 ounces cream cheese at room temperature
  • 1 cup heavy cream
  • 1 teaspoon vanilla

Instructions

  • Combine sweetener, salt, and blueberries in a small pot and bring to a simmer. Cook for 10 minutes until the berries break down and form a jam. Puree until smooth in a food processor.
  • Add sour cream and cream cheese to the food processor and puree until smooth.
  • Whip cream and then fold it into the blueberry mixture. Plate into individual glasses, garnish, and serve.
