Blueberry Jam Filled Goat Cheese Balls

These are a fun appetizer and make a great addition to a spring charcuterie plate. Homemade blueberry jam is wrapped in a sweet and tangy vanilla goat cheese and rolled into mini personal cheese balls. Of course, you could just as easily form this into one large cheese ball or even a log. Decorate the outside with edible flowers or micro greens. A great variation is to add a bit of fresh herbs to the jam as well. Rosemary, thyme, or even fresh bay leaf would be good here. Likewise, you can use any berry for the jam you prefer. I like to serve these with prosciutto for some salt to balance the sweet.

Ingredients

Cheese

  • 8 ounces goat cheese at room temperature
  • 4 ounces cream cheese at room temperature
  • heavy cream as needed
  • 1/4 teaspoon vanilla extract
  • stevia glycerite to taste
  • pinch of salt

Jam

  • 1 1/4 cup frozen blueberries (the smaller the better)
  • 1/4 teaspoon glucomann powder
  • pinch of salt
  • stevia glycerite to taste
  • splash of vanilla extract
  • lemon juice to taste, optional

To Garnish

  • edible flowers and micro greens optional (pictured here are oxalis leaves, calendula petals, and rosemary flowers)

Instructions

For the Cheese

  • Combine the goat cheese, cream cheese, vanilla, sweetener, and salt in a bowl, mix well until smooth, adding a bit of cream if needed and adjusting sweetness to taste. Refrigerate until the mixture firms up, about 30 minutes – you want it to be firm but pliable.

For the Jam

  • Combine berries and glucomann in a glass bowl and stir to distribute evenly. Cover the bowl with a plate and microwave for 3 minutes. After the 3 minutes, stir and microwave in 30 second bursts, stirring after each one until desired consistency is reached. Stir in lemon and vanilla, if using. Chill completely before using.

To Form

  • Divide the goat cheese mixture into 12 portions. Roll each portion into a rough ball and then working with one at a time, flatten the balls to form a disc in your hands (it doesn’t need to be perfectly round or pretty. Keep the remaining cheese balls refrigerated so they will be easier to work with. Add a tablespoon of jam to the center of the disc and then gather the edges of the disc together to enclose the jam in a sphere. Lightly pinch the edges to seal, almost as if you’re making a stuffed meatball or dumpling. Gently roll the sealed ball around in your hands to smooth the ball out. If it is sticking too much, it can help to refrigerate the sealed balls before rolling them smooth.
  • For ease and perfectly round balls, freeze the jam in small molds first (this just makes it easier to enclose the jam without it mixing with the cheese and helps with forming the round shape). I highly recommend this step. Note that if you are using a jam with allulose or sugar, it may not freeze so test a small amount first.
  • Place rolled balls into the fridge or even freezer to briefly set. When chilled, place flowers or edible leaves onto the surface and serve either chilled or at room temperature.
