Peach Sorbet
Bright, sweet, tangy, and refreshing, this easy no-cook sorbet comes together in minutes and is perfect for a summer day.

Ingredients
- 1 pound peaches frozen
- 1/2 cup cold water
- 1/4 cup egg whites (I like to use the pasteurized boxed whites so I don't waste yolks), or more water
- 1/4 cup allulose
- 2 tablespoons lemon juice
- 1/8 teaspoon stevia glycerite or 2 more tablespoons allulose
- 1/4 teaspoon salt
- 1/4 teaspoon peach extract optional
- 1/8 teaspoon xanthan gum optional, for texture
Instructions
- Combine all ingredients in a high power blender and process until smooth. Pour into a freezer-safe container and freeze until solid, about 4 hours.
