Peach Sorbet

Ingredients

  • 1 pound peaches frozen
  • 1/2 cup cold water
  • 1/4 cup egg whites (I like to use the pasteurized boxed whites so I don't waste yolks), or more water
  • 1/4 cup allulose
  • 2 tablespoons lemon juice
  • 1/8 teaspoon stevia glycerite or 2 more tablespoons allulose
  • 1/4 teaspoon salt
  • 1/4 teaspoon peach extract optional
  • 1/8 teaspoon xanthan gum optional, for texture

Instructions

  • Combine all ingredients in a high power blender and process until smooth. Pour into a freezer-safe container and freeze until solid, about 4 hours.
