Poke Board Inspiration

This is not a recipe but more inspiration for a fun version of the popular trend of serving foods on boards. Simply arrange your desired salad ingredients on a board, top with a variety of protein options and garnishes and serve along with a variety of dressings for everyone to customize their own poke bowl. Listed below are a few ideas for ingredients to include/choose from to get you started. Donā€™t like raw seafood – use cooked shrimp, salmon bites, or even teriyaki chicken instead. Soft boiled eggs, tofu, chopped hearts of palm, or even compressed watermelon could be swapped for the seafood for a vegetarian version.

Ingredients

Proteins

  • salmon sashimi grade
  • tuna sashimi grade
  • miso crab

Salad ingredients

  • mixed greens
  • watermelon radish shaved
  • English cucumber shaved
  • carrots shredded
  • red cabbage shaved
  • edamame
  • seaweed salad
  • seaweed Hijiki, Wakame, Ogo
  • avocado sliced
  • green onions shaved

Fruits

  • pink pineapple or regular, diced pineapple
  • mango peeled, pitted, and diced
  • golden kiwi or regular kiwi, peeled and sliced

Garnishes

  • salmon roe
  • wasabi flavored roe
  • furikake
  • nori strips
  • macadamias chopped
  • pickled veggetables
  • pickled ginger
  • fried root vegetable chips

Creamy Sesame Sauce

Spicy Sriracha Sauce

Instructions

  • Stir together dressing ingredients and set aside.
  • If using seaweed, rehydrate it by covering it generously with boiling hot water in a bowl. Let stand for at least 10 minutes, or until the seaweed swells and is soft throughout. Pour through a fine mesh strainer and squeeze as much water out as possible.
  • Arrange salad ingredients on a board, top with protein and garnishes.
  • Serve board with dressing along side to allow everyone to customize their own poke bowl.
