Egg White Protein Bread
Soft and tender bread that is low carb and protein focused. This is great for toast for breakfasts, making breadcrumbs, croutons, crostini, and sandwiches! This is adapted from cloud bread and many other egg white based protein bread variations out there. Feel free to add different seasonings. A cinnamon swirl, everything bagel seasonings, garlic, or caraways seeds are all fun variations.

Ingredients
- 10 egg whites 16 ounces (I like to use boxed whites such as Kirkland brand but due to the pasteurization process this can sometimes lead to slightly collapsed loaves with a dense texture so use fresh eggs for best success)
- 3/4 teaspoon salt
- 1 drop stevia glycerite optional
- 1/4 teaspoon apple cider vinegar or cream of tartar, optional
- 3/4 cup unflavored whey powder or egg white powder for dairy-free
Instructions
- Preheat the oven to 350°F and lightly grease a 9 by 5-inch loaf pan (you can skip this step if using a silicon baking form) with avocado oil.
- Beat the egg whites, salt, stevia, and vinegar to stiff peaks (this can take a lot of time, depending on the strength of your mixer). I find that mixing on a lower speed makes for smaller more stable bubbles as opposed to the highest setting.
- Add the protein powder and beat in on the lowest setting until completely mixed but, being careful not to knock too much air out of the whites (which will cause a dense and tough loaf).
- Spoon the batter into the prepared pan and smooth the top. Bake at 350ºF for 40-45 minutes, until golden and firm to the touch. Turn off the oven and let the bread cool in the oven for at least 10 minutes.
- Remove from oven and turn out bread to cool completely before slicing. Will keep for 1 week, refrigerated.

Makes 10 slices. Serving size: 2 slices.
