Pizza Meatballs

Meatballs covered in pizza sauce, melted cheese, and pepperoni for the familiar pizza flavors. Feel free to add your favorite toppings – mushrooms, onions, bell pepper, and olives all make excellent additions. I like to serve this with a light side salad. ļæ¼

Ingredients

Meatballs

  • 1 1/4 pound lean ground beef or chicken or turkey, use full fat beef or pork for higher fat
  • 1/2 cup pork panko
  • 1 egg
  • 1/2 onion diced
  • 1 1/2 teaspoon gelatin
  • 1/3 cup parmesan grated, omit for dairy-free or use your favorite dairy-free alternative
  • 2 tablespoons nutritional yeast
  • 2 tablespoons parsley minced
  • 1/2 tablespoon Worcestershire sauce
  • 2 cloves garlic
  • 2 teaspoons Italian Seasoning
  • 1 teaspoon anchovy paste or fish sauce, optional, adds umami and you wonā€™t taste it
  • 1/2 teaspoon salt
  • 1 teaspoon avocado oil

To Serve

  • 1 cup pizza sauce such as Primal Kitchen
  • 1 cup low fat mozzarella cheese use full fat for higher fat, or your favorite dairy-free alternative
  • 1/4 cup parmesan grated, or your favorite dairy-free alternative
  • 2 ounces turkey pepperoni optional, or full fat pepperoni for higher fat

Instructions

  • Preheat the oven to 350ĀŗF and lightly grease a rimmed baking dish.
  • Combine all meatball ingredients except avocado oil in a large bowl and use your hands to mix until evenly combined. Form into about 1 tablespoon size meatballs, about 20 meatballs.
  • Place the meatballs into the prepared baking dish and bake at 350ĀŗF for 15-20 minutes, or until cooked through.
  • Pour the pizza sauce over top, sprinkle with cheeses, and top with pepperoni. Bake for another 5 minutes then broil on low until the cheese is melted and just beginning to brown in spots, about 5 minutes more.
