Brussels Sprouts with Caesar Dressing

Quick, easy, and delicious. You can make this with a low-fat Caesar Dressing as below or use homemade aioli or mayonnaise to increase the fat.

Ingredients

Dressing

  • 1/2 tablespoon anchovy paste 6-8 anchovy fillets, or from a tube of anchovy paste
  • 1 egg yolk optional (use pasteurized eggs if youā€™re concerned about raw eggs)
  • 1 small garlic clove
  • 2 tablespoon lemon juice 1 lemon
  • 1/4 teaspoon fish sauce
  • 1/4 cup kefir low fat, or low-fat yogurt, use aioli or mayonnaise for high fat
  • 2 tablespoons Parmesan grated
  • salt and pepper to taste

Brussels Sprouts

  • 1 teaspoon avocado oil
  • 2 cups brussels sprouts trimmed and halved
  • salt and pepper to taste

To Serve

  • 2 tablespoons pork panko optional
  • 2 tablespoons parmesan shaved

Instructions

  • Microwave the Brussels sprouts in a microwave-safe bowl until they are just fork-tender, about 4-8 minutes, depending on your microwaveā€™s power (check at 4 minutes). Alternatively, you can steam them in a steamer basket on the stovetop for about 5 minutes if you prefer.
  • Heat a large nonstick pan over high heat and add the oil along with the steamed Brussels sprouts. Cook until lightly charred, about 3-5 minutes.
  • Combine all dressing ingredients in a blender and blend until smooth. Adjust seasoning to taste with salt and pepper.
  • Toss the sprouts with the dressing, top pork panko, if using and garnish with more shaved Parmesan, if desired. Serve immediately.
