Heat a large nonstick pan over high heat and add the oil along with the steamed Brussels sprouts. Cook until lightly charred, about 3-5 minutes.
Combine all dressing ingredients in a blender and blend until smooth. Adjust seasoning to taste with salt and pepper.
Toss the sprouts with the dressing, top pork panko, if using and garnish with more shaved Parmesan, if desired. Serve immediately.
