Shaved Carrot Salad with Parsley, Cilantro, Lime, and Peanuts
Coriander lends a light floral twist to this Indian-inspired shaved carrot salad. Lime brightens the carrot ribbons while peanuts add richness and crunch. A mixture of fresh herbs for garnish completes this easy and delicious dish

Ingredients
- 4 carrots peeled and shaved (on a mandolin or with a vegetable peeler)
- 1 tablespoon olive oil or avocado oil
- 1 tablespoon lime juice 1 lime
- pinch coriander ground
- 1 tablespoon coconut aminos or to taste, or use sugar-free maple syrup
- 2 tablespoons cilantro minced
- 1 tablespoon parsley minced
- 1 green onion sliced fine
- 1/4 teaspoon Korean chili flakes optional, omit for nightshade-free
- 1/4 cup roasted peanuts chopped, use toasted sunflower seeds for nut-free
Instructions
- Combine all ingredients in a bowl and toss to combine. Adjust seasoning to taste and serve at room temperature.
