Caramelized Kale
Slow cooked kale, onions, and garlic take on a rich flavor with a bit of heat and bright tartness from cider vinegar for a delicious side.

Ingredients
- 3 tablespoons avocado oil
- 1 white onion diced
- 2 garlic cloves minced
- 2 bunches Dino kale
- 2 tablespoons cider vinegar
- 1/2 teaspoon salt or to taste
- pinch red pepper flakes omit for nightshade-free
Instructions
- Heat the avocado oil with onion and garlic until softened, about 5-10 minutes. Add the kale and cook, stirring occasionally until deeply caramelized, about 40 minutes. Stir in vinegar and season to taste with salt and red pepper.
