Indoor BBQ Skirt Steak with Lexington Sauce

Smoky, tangy, with a bit of sweetness and apple notes, this delicious steak dinner comes together fast and is delicious served with Creamy Apple Slaw.

Ingredients

Steak

  • 2 teaspoons celery salt
  • 4 tablespoons monk fruit golden, or 4 tablespoons coconut aminos
  • 1 tablespoon sweet paprika
  • 1 tablespoon smoked paprika
  • 2 teaspoons garlic powder
  • 1 teaspoon black pepper fresh ground
  • 1/8 teaspoon cayenne pepper optional
  • 2 pounds skirt steak

Sauce

  • 1/2 cup apple cider vinegar
  • 4 tablespoons no sugar added ketchup such as Primal Kitchen or Alternasweets
  • 2 tablespoon monk fruit golden, or 1 tablespoon coconut aminos
  • 2 teaspoons apple extract optional
  • 1/2-1 teaspoon salt start with 1/2 teaspoon and add more to taste
  • 1/4 teaspoon black pepper fresh ground
  • 1/8 teaspoon hot sauce

Instructions

  • Whisk all sauce ingredients together in a bowl and refrigerate for at least 8 hours, preferably overnight, and up to 3 weeks.
  • Combine all seasonings and rub onto steaks. Let marinate at least 8 hours, and up to overnight.
  • Heat a large cast iron pan over medium-medium high. When hot, add a bit of avocado oil and when the oil is hot, add the skirt steak, pressing to ensure good contact with the pan for the best sear. Cook fro about 3 minutes per side for medium-rare, or until desired doneness.
  • Brush the steak with a light coating of the sauce and let the steak rest for 10 minutes before slicing against the grain for the most tender result. Serve with remaining sauce on the side.
  • Note: You can also broil this in the oven on a greased, foil-lined baking sheet for 5-8 minutes per side, or until cooked to your liking. Make sure to rest the steak for 10 minutes before slicing.

Creamy Apple Slaw

Chayote squash mixed with apple extract, a bit of sweetener, and some vinegar tastes very close to apple. Mix that with a classic coleslaw and you have a bright and refreshing no-cook summery side.

Ingredients

  • 1 chayote squash cut into matchsticks
  • 2 cups coleslaw mix
  • 1 teaspoon apple extract
  • 1 1/2 tablespoons mayonnaise sub more Greek yogurt for egg-free
  • 4 tablespoons non-fat Greek yogurt or more mayonnaise for dairy-free
  • 1 tablespoon apple cider vinegar start with 1/2 and add more as desired
  • couple drops stevia glycerite to taste, or preferred sweetener
  • celery salt and pepper to taste

Instructions

  • Combine all ingredients and stir to coat everything evenly. Taste and adjust the sweetness and tang with more sweetener and vinegar, as desired. The sweetness in combination with the apple extract really helps the squash take on the apple taste. This can be made a day ahead.
