Whisk all sauce ingredients together in a bowl and refrigerate for at least 8 hours, preferably overnight, and up to 3 weeks.
Combine all seasonings and rub onto steaks. Let marinate at least 8 hours, and up to overnight.
Heat a large cast iron pan over medium-medium high. When hot, add a bit of avocado oil and when the oil is hot, add the skirt steak, pressing to ensure good contact with the pan for the best sear. Cook fro about 3 minutes per side for medium-rare, or until desired doneness.
Brush the steak with a light coating of the sauce and let the steak rest for 10 minutes before slicing against the grain for the most tender result. Serve with remaining sauce on the side.
Note: You can also broil this in the oven on a greased, foil-lined baking sheet for 5-8 minutes per side, or until cooked to your liking. Make sure to rest the steak for 10 minutes before slicing.
