Cauliflower Tabbouleh
Bright, fresh, and herbal, this cauliflower tabbouleh is an easy no-cook side dish.

Ingredients
- 1 cup cauliflower rice
- 1 Roma tomato seeds squeezed out and diced small
- 1 tablespoon lemon juice 1 small lemon
- 2 tablespoons olive oil
- pinch cayenne pepper
- 1/2 cup parsley minced
- 1/8 cup mint minced
- 1 green onion sliced thin
- salt and pepper to taste
Instructions
- Combine all ingredients in a bowl and toss to distribute evenly. Season to taste with salt and pepper, and more lemon juice, if desired.
