Green Goddess Chicken Salad
This is a bright, fresh, herbal chicken salad that comes together quickly and easily. Using pre-cooked chicken makes this no-cook and leftovers save well. Serve on a bed of mixed greens or with a vegetable side.

Ingredients
Dressing
- 1/4 cup basil
- 1/4 cup parsley
- 1/4 cup tarragon
- 1/4 cup chives
- 2 garlic cloves peeled
- 1 cup mayonnaise or aioli
- 3 tablespoons monk fruit granulated
- 2 tablespoon lemon juice
- 2 tablespoon apple cider vinegar
- 1 teaspoon ground black pepper
- 1/2 teaspoon salt
Salad
- 2 pounds boneless chicken breast halves pre-cooked and roughly chopped
- 4 green onions thinly sliced
- salt and pepper to taste
- 2 celery ribs chopped
Instructions
- Combine all dressing ingredients in a blender and blend until smooth. Pour into a large bowl and add the chicken, green onions, and celery. Toss to combine. Adjust lemon juice, salt, and pepper to taste.
