Roast Cauliflower with Dukkah and Green Tahini

Dukkah is an Egyptian spice blend of toasted nuts, sesame, cumin, and coriander. If you are avoiding nuts, then zaā€™atar spice blend is another delicious Middle Eastern seasoning you can use. Both spice blends go well with the green tahini sauce.

Ingredients

  • 2 cups cauliflower florets
  • 2 tablespoons avocado oil or olive oil
  • 2 tablespoons Dukkah or more, to taste, you can make your own, or 1 tablespoon zaā€™atar if you are nightshade-free
  • salt and pepper to taste
  • 1/4 cup Tahini Sauce see recipe here
  • 1/2 cup parsley or cilantro

Instructions

  • Preheat the oven to 425ĀŗF.
  • Toss the cauliflower with avocado oil, Dukkah, salt, and pepper. Spread onto the baking sheet. Bake for 20-25 minutes
  • While the cauliflower roasts, prepare the tahini sauce. Combine in a blender and process until smooth. Adjust seasoning to taste and serve over roasted cauliflower.

Serving Size is 1/2 cup.
