Roast Cauliflower with Dukkah and Green Tahini

Dukkah is an Egyptian spice blend of toasted nuts, sesame, cumin, and coriander. If you are avoiding nuts, then za’atar spice blend is another delicious Middle Eastern seasoning you can use. Both spice blends go well with the green tahini sauce.

Ingredients

  • 2 cups cauliflower florets
  • 2 tablespoons avocado oil or olive oil
  • 2 tablespoons Dukkah or more, to taste, you can make your own, or 1 tablespoon za’atar if you are nightshade-free
  • salt and pepper to taste
  • 1/4 cup Tahini Sauce see recipe here
  • 1/2 cup parsley or cilantro

Instructions

  • Preheat the oven to 425ºF.
  • Toss the cauliflower with avocado oil, Dukkah, salt, and pepper. Spread onto the baking sheet. Bake for 20-25 minutes
  • While the cauliflower roasts, prepare the tahini sauce. Combine in a blender and process until smooth. Adjust seasoning to taste and serve over roasted cauliflower.
