Tomato Salad

This salad comes together fast and is best made with high quality tomatoes. Use any fresh herbs you like to play with the flavor profile.

Ingredients

  • 2 cups tomatoes sliced, 2 medium
  • 1 green onion thinly sliced, or 1/4 red onion
  • 3 tablespoons fresh parsley chopped (or any herb of choice)
  • 2 tablespoons fresh basil chopped, optional
  • 2 tablespoons olive oil
  • 2 tablespoon red wine vinegar or apple cider vinegar
  • 1/2 tablespoon monk fruit granulated
  • 1/8 teaspoon salt or more to taste
  • 1/8 teaspoon pepper fresh ground

Instructions

  • Combine all ingredients and toss to coat evenly. Serve.
