Mascarpone with Berries

This is an easy, no-cook dessert that is ready quickly. Feel free to add any extract you like to the mascarpone. Almond is a nice variant. If you make the berry compote, you can also add fresh herbs such as mint, thyme, or lavender.

Ingredients

  • 8 ounces mascarpone cheese or ricotta
  • 1/2 cup heavy cream
  • 1/2 cup monk fruit powdered, or liquid monk fruit, to taste
  • 1/4 teaspoon vanilla extract
  • pinch of salt
  • zest of 1 lemon
  • 1 cup fresh berries

Instructions

  • Beat the mascarpone with the cream until very thick. Add the zest, monk fruit, salt, and vanilla and beat again.
  • Serve the cream with the berries.

Notes

I also like to serve the mascarpone with a berry compote, which is only a little bit more effort.
Compote:
1 tablespoons lemon juice (1 lemon)
1 tablespoons monk fruit, granulated
splash of vanilla extract
pinch of salt
Combine the lemon juice, granulated monk fruit, salt, and vanilla. Pour over berries.
