Chocolate Mocha Protein Shake
This produces a rich and creamy shake that tastes best after sitting for one day in the refrigerator. It can be stored for up to 4 days.Ā Start with 1 teaspoon of coffee extract and add more, to taste. You can also adjust the thickness to taste with more coconut beverage, if desired.Ā Inspired by Maria Emmerich's protein pudding.

Ingredients
- 4 eggs hard boiled and peeled
- 13.5 oz coconut milk
- 1 cup coconut beverage or almond milk, or more, to taste
- 4 tablespoons cocoa powder
- 1 teaspoon stevia glycerite or more liquid monk fruit, to taste
- 1/2 teaspoon liquid monk fruit
- 4 tablespoons collagen
- 1/4 cup protein powder egg white based, unsweetened
- Pinch of salt
- 1 teaspoon vanilla
- 1-3 teaspoons coffee extract to taste
Instructions
- Combine all ingredients in a blender and blend until completely smooth. Taste after blending and adjust sweetener, cocoa, and salt to your liking.
Notes
A high powered blender or bullet works best for this as the egg needs to be completely smooth or else the texture is not right.
Tip: hardboiled eggs can be made in a large batch and kept in the fridge for the week. They also make good snacks and salad additions so itās a good idea to have them on hand. To make them, add the eggs to a pot and cover with 2 inches of cold water. Bring this to a boil then turn off heat and let sit, covered for 10 minutes. Transfer to an ice bath for 5 minutes. Peel or store, as desired.
