Hungarian Goulash

Rich and peppery, this hearty beef stew goes well with a tangy scoop of sour cream.

Ingredients

  • 4 tablespoons butter or avocado oil, if dairy-free
  • 2 onions sliced
  • 2 tablespoon sweet paprika
  • 2 teaspoon salt or more, to taste
  • 1/2 teaspoon black pepper fresh ground
  • 3 pounds beef stew meat cut into 1 1/2 inch cubes, or tri-tip
  • 6 ounces tomato paste 1 can
  • 2 cups chicken broth
  • 2 clove garlic minced

Instructions

  • Heat butter over medium high heat in a large pot and when hot, add the onions, cooking until soft, about 5 minutes.
  • While the onions cook, toss the beef cubes with paprika, salt, and pepper.
  • Remove the onions from the pot and set aside. In the now empty pot, add the beef cubes and brown on all sides, about 5-10 minutes. Add back the onions, tomato paste, and garlic and cook for about 2 minutes. Add the broth and bring to a simmer. Cook for 2 hours, or until meat is tender.
  • Serve with sour cream, if desired.
