Greek Cabbage Salad
A touch of sweetness and plenty of vinegar make this punchy salad a perfect side to Mediterranean meals. I also like to add fresh dill for a variation.

Ingredients
- 1 pound red cabbage thinly sliced (1/2 medium head, 4 cups)
- 1/2 red bell pepper chopped (omit if nightshade-free and replace with chopped olives)
- 2 green onions chopped
- 1/2 cup fresh parsley chopped
- 2 tablespoons apple cider vinegar or lemon juice
- 4 tablespoons olive oil
- 1/4 teaspoon salt
- 1 teaspoon monk fruit granulated
- 1/8 teaspoon black pepper
Instructions
- Combine all ingredients in a large bowl and mix well.
