Greek Cabbage Salad

A touch of sweetness and plenty of vinegar make this punchy salad a perfect side to Mediterranean meals. I also like to add fresh dill for a variation.

Ingredients

  • 1 pound red cabbage thinly sliced (1/2 medium head, 4 cups)
  • 1/2 red bell pepper chopped (omit if nightshade-free and replace with chopped olives)
  • 2 green onions chopped
  • 1/2 cup fresh parsley chopped
  • 2 tablespoons apple cider vinegar or lemon juice
  • 4 tablespoons olive oil
  • 1/4 teaspoon salt
  • 1 teaspoon monk fruit granulated
  • 1/8 teaspoon black pepper

Instructions

  • Combine all ingredients in a large bowl and mix well.
