Keto Cherry Mash
Cherry mash is a sweet candy made of an earthy, rich chocolate peanut layer to balance the sweet cherry topping. A little bit goes a long way! The traditional version uses so many sugar laden pre-packaged products that it hurts your teeth to eat. This version tones down the excessive sweetness and uses sugar alternatives to make it keto-friendly.

Ingredients
Cherry Layer
- 8 ounces cacao butter
- 1/2 cup butter
- 2 teaspoons cherry extract
- 2 teaspoons vanilla extract
- 1/4 teaspoon red food coloring natural, or more to desired color, optional
- pinch of salt
- 1/3 cup cream
- 1 teaspoon stevia glycerite or other sweetener to taste
Chocolate Layer
- 9 ounces chocolate chips 1 bag Lily’s milk chocolate baking chips, for example
- 1/2 cup crunchy peanut butter
- pinch of salt
- 1 teaspoon vanilla
Instructions
- Mix together the butter and cream in a small pot over low heat until melted. While still hot, add cacao butter, and let sit 5 minutes, stir until completely dissolved. Then add cherry, vanilla, and red food coloring. Spread into a parchment lined 8×8-inch pan and refrigerate or freeze to set.
- Meanwhile, melt chocolate and peanut butter together. Add salt and vanilla, stir to combine and spread over the cooled first layer. Refrigerate until set, about 2 hours or overnight. Cut into 1-inch squares.
Notes
Note: I like to store this in the fridge and pull a piece out and let it come to room temperature for a few minutes before consuming.
