Cherry mash is a sweet candy made of an earthy, rich chocolate peanut layer to balance the sweet cherry topping. A little bit goes a long way! The traditional version uses so many sugar laden pre-packaged products that it hurts your teeth to eat. This version tones down the excessive sweetness and uses sugar alternatives to make it keto-friendly.
Mix together the butter and cream in a small pot over low heat until melted. While still hot, add cacao butter, and let sit 5 minutes, stir until completely dissolved. Then add cherry, vanilla, and red food coloring. Spread into a parchment lined 8x8-inch pan and refrigerate or freeze to set.
Meanwhile, melt chocolate and peanut butter together. Add salt and vanilla, stir to combine and spread over the cooled first layer. Refrigerate until set, about 2 hours or overnight. Cut into 1-inch squares.

Note: I like to store this in the fridge and pull a piece out and let it come to room temperature for a few minutes before consuming.
