Breakfast Porridge

This tastes like a french toast hot breakfast cereal.

Ingredients

  • 2 eggs
  • 1/4 cup cream or coconut cream, if dairy free
  • 1 tablespoon butter or butter flavored coconut oil, if dairy free
  • 1/2 teaspoon vanilla extract
  • sweetener to taste
  • pinch of salt
  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon nutmeg

Instructions

  • Whisk together the eggs, cream, vanilla, salt, sweetener, cinnamon, and nutmeg until completely smooth.
  • Heat a small pan over medium-high heat and add butter. Once melted, add the eggs and whisk constantly. The mixture will thicken first and then begin to curdle. When you see small curds forming, turn off the heat and continue to whisk. Pour into a serving bowl and top with more cinnamon, if desired.

    isn’t this just…essentially…scrambled eggs…?

      It is more of a curdled custard or pudding, giving it a texture similar to a porridge and seasoned with sweet spices. It’s a nice variation for a quick and very low carb breakfast with an egg base (you can add a few hemp seeds or some coconut flour for something more substantial but that will also bump up the carbs).
