Chocolate Raspberry Fat Bombs
Coat the truffles in crushed freeze-dried raspberries or cocoa powder.

Ingredients
- 8 oz cream cheese softened, or kite hill cream cheese for dairy-free
- 3 oz unsweetened chocolate
- 1 1/2 teaspoons monk fruit liquid
- 1/4 cup monk fruit powdered
- Pinch of salt
- 1 teaspoon vanilla
- 1 1/2 teaspoons raspberry extract
Instructions
- Melt chocolate in microwave at 50% power or in a double boiler until smooth.
- Add softened cream cheese and mix well. Add extracts, sweetener, and salt and stir to mix well.
- Spoon into molds or place into a freezer-safe loaf pan or square baking dish.
- Freeze then remove from molds or pan. If using a pan, cut into pieces.
