Peanut Butter Coconut Treats
An easy, no bake treat that doubles as dessert or an on-the-go option! Store in the fridge but they should be portable with or without chocolate. Substitute the peanut butter for almond or macadamia butter.

Ingredients
- 3/4 cup shredded coconut
- 1/2 cup crunchy peanut butter
- 1/3 cup monk fruit powdered
- 1/4 teaspoon vanilla
- 1/8 teaspoon salt
- 1/8 cup chocolate chopped small (optional)
Instructions
- Mix all ingredients well. Form into balls or bars and freeze.
Notes
The nutrition is the same if you use peanut butter or almond butter. To use macadamias, make your own butter by processing 1 cup of macadamia nuts in a blender or food processor until smooth before proceeding with the recipe.
