
Cucumber Salad with Roasted Peanuts
Lightly pickled cucumber slices with crunchy peanuts and fresh, herbal cilantro. Recipe adapted from Bon Appétit.

Ingredients
- 2 tablespoons lime juice or more, to taste
- 2 tablespoons fish sauce
- 2 tablespoons monk fruit granulated
- 1 teaspoon sriracha optional, to taste
- 1 garlic clove minced
- 1 English cucumber halved and thinly sliced
- 2 tablespoons cilantro minced
- 4 tablespoons salted roasted peanuts coarsely chopped, or almonds, optional
- Furikake optional
Instructions
- Combine lime juice, fish sauce, monk fruit, sriracha, and garlic in a bowl. Stir in cucumber and garnish with cilantro, peanuts, and furikake.
