Lightly pickled cucumber slices with crunchy peanuts and fresh, herbal cilantro. Recipe adapted from Bon Appétit.

Ingredients

  • 2 tablespoons lime juice or more, to taste
  • 2 tablespoons fish sauce
  • 2 tablespoons monk fruit granulated
  • 1 teaspoon sriracha optional, to taste
  • 1 garlic clove minced
  • 1 English cucumber halved and thinly sliced
  • 2 tablespoons cilantro minced
  • 4 tablespoons salted roasted peanuts coarsely chopped, or almonds, optional
  • Furikake optional

Instructions

  • Combine lime juice, fish sauce, monk fruit, sriracha, and garlic in a bowl. Stir in cucumber and garnish with cilantro, peanuts, and furikake.
