Broccoli Salad with Bacon and Almonds

This is a great make ahead meal option. Toss in some diced avocado and serve with a hardboiled egg for a full meal.

Ingredients

  • 3/4 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 2 teaspoons monk fruit powdered, or more to taste, up to 2 tablespoons
  • 4 cups broccoli broken into small florets (1 pound, about 2 large heads)
  • 1/4 small red onion diced small
  • 8 slices cooked bacon chopped
  • 1/2 cup sliced almonds toasted and chopped
  • salt and pepper to taste

Instructions

  • Stir together the mayonnaise, vinegar, and monk fruit until well combined in a large bowl. Taste and adjust seasoning, especially monk fruit to desired sweetness.
  • Add in broccoli, onion, bacon, and almonds and stir to coat everything evenly.
  • Season to taste with salt and pepper then refrigerate for one hour before serving.

Notes

This recipe is dairy free but if you like, you can add shredded cheese.
