Prasini Salad
This Greek Salad is refreshing and full of bright and briny flavors. Crispy Romaine hearts are tossed with fresh scallions, dill, shredded feta cheese, extra virgin olive oil, lemon and lemon zest.

Ingredients
- 4 cups Romaine lettuce 1 head, chopped fine
- 3 ounces feta crumbled
- 3 tablespoons extra virgin olive oil
- 4 green onions sliced thin
- 1/4 cup dill stems removed and chopped fine
- 2-3 tablespoons lemon juice one lemon, or red wine vinegar
- zest of 1/2 lemon
- salt and pepper to taste
Instructions
- Combine the Romaine, feta, and olive oil in a large serving bowl and toss to coat evenly. Add the remaining ingredients and season to taste with salt and pepper. Serve immediately.
