Bourbon Chicken

Sweet, salty, with a bit of bite from vinegar and sriracha, this is an addictive chicken dinner. I like to serve this with cauliflower or kelp noodle rice.

Ingredients

  • 1 pound chicken thighs or breasts cut into one inch pieces
  • 2 teaspoons avocado oil
  • 1/2 cup gluten-free soy sauce or coconut aminos
  • 1/3 cup allulose or 1/4 cup monk fruit, golden, omit if using coconut aminos
  • 1 1/2 tablespoons tomato paste
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon gelatin
  • 1/4 teaspoon sriracha optional
  • 3 garlic cloves minced
  • 1 teaspoon ginger fresh grated
  • 1/4 cup bourbon or chicken broth
  • 2 green onions sliced for garnish

Instructions

  • Heat 2 teaspoons oil in a large non-stick pan over medium high heat. Add the chicken and sautĆ© until browned, about 5-10 minutes.
  • While chicken browns, stir together the gluten free soy sauce, allulose, tomato paste, vinegar, gelatin, and sriracha. Set aside
  • Add the garlic and ginger to the chicken and cook until fragrant, another minute. Add the bourbon, or stock and cook until reduced by half. Add the reserved sauce mixture and cook until reduced by half again, another 5-10 minutes, or until thick and syrupy. Garnish with green onions before serving.
