BBQ Ranch Chicken Salad

Creamy ranch dressed greens get topped with cheese, tomatoes, avocado, and grilled chicken with BBQ sauce for an easy, no-cook summery feeling salad. This is inspired by California Pizza Kitchen restaurant. Add any mix of fresh herbs you like.

Ingredients

Salad

  • 4 cups romaine lettuce chopped
  • 1/4 cup ranch dressing homemade or pre-made such as Primal Kitchen
  • 1/4 cup Mexican cheese blend shredded
  • 4 ounces cherry tomatoes quartered, or 2 tomatoes, diced
  • 1/2 avocado diced, optional
  • 10 ounces grilled chicken breast diced

BBQ Sauce

Instructions

  • Add the romaine to a large bowl and toss with the ranch dressing. Top with cheese, tomatoes, avocado, and chicken. Set aside.
  • Stir together the BBQ sauce ingredients and drizzle over chicken salad before serving.
