Pea Shoot Sauté
Simple but fast and flavorful, this makes a great Asian side dish.

Ingredients
- 4 ounces pea shoots 1 1/2 cups
- 3 slices ginger
- 1 tablespoon avocado oil
- 1/2 teaspoon sherry vinegar
- salt and pepper
- 2 tablespoons chicken fat or duck fat
Instructions
- Add the ginger and avocado oil to a medium sauté pan over high heat and cook until fragrant. Add the pea shoots and vinegar and cook, stirring constantly until wilted. Add the chicken fat and stir until evenly coated. Serve.
