Jalapeño Popper Burger
These burgers are seasoned with Mexican flavors and stuffed with a cream cheese jalapeño filling. Top with cheddar, tomatoes, and a drizzle of chipotle sauce for a different take on the classic burger.

Ingredients
Burgers
- 3 tablespoons cream cheese softened, or Kite Hill cream cheese for dairy-free
- 1 tablespoon pickled jalapeños chopped fine
- 1/2 pound ground beef
- 1/4 pound ground pork or more beef
- 1/2 tablespoon taco seasoning or cajun seasoning blend
- salt to taste
To Serve
- 2 slices sharp cheddar omit for dairy-free
- 1 small tomato sliced thin
- 4 tablespoons chipotle aioli
- 4 leaves butter lettuce
Instructions
- Stir together the cream cheese and jalapeños. Set aside.
- Mix the beef, pork and seasoning until well combined. Divide the mixture and flatten into two large discs. Divide the cream cheese mixture into the center of each. Wrap the patty around the filling and pinch gathered edges to seal. Form each into a patty and season generously with salt, to taste.
- Grill or cook in a cast iron skillet over high heat, about 5 minutes per side (160ºF internal), or to your liking. Just before the last minute of cooking, add one slice of cheese to the top of each burger, if desired to allow it to melt.
- To serve, place a couple of butter lettuce leaves on a plate. Top with burger then sauce and tomatoes.

For the Chipotle Sauce:
Ingredients:
1/2 cup sour cream or mayonnaise for dairy-free
1 chipotle in adobo with 2 tablespoons of sauce from the can
1 tablespoon lime juice, 1/2 lime
1/4-1/2 teaspoon salt
Instructions:
Add all ingredients to a blender (start with 1/4 teaspoon salt). Process until completely smooth. Taste and add more salt, if desired.
