These burgers are seasoned with Mexican flavors and stuffed with a cream cheese jalapeño filling. Top with cheddar, tomatoes, and a drizzle of chipotle sauce for a different take on the classic burger.
Stir together the cream cheese and jalapeños. Set aside.
Mix the beef, pork and seasoning until well combined. Divide the mixture and flatten into two large discs. Divide the cream cheese mixture into the center of each. Wrap the patty around the filling and pinch gathered edges to seal. Form each into a patty and season generously with salt, to taste.
Grill or cook in a cast iron skillet over high heat, about 5 minutes per side (160ºF internal), or to your liking. Just before the last minute of cooking, add one slice of cheese to the top of each burger, if desired to allow it to melt.
To serve, place a couple of butter lettuce leaves on a plate. Top with burger then sauce and tomatoes.
