Milk Barfi
This is an easy no-cook version of the Indian treat that is basically a milk fudge scented with cardamom and sprinkled with chopped pistachios. For an extra decoration, add some edible gold or silver leaf.

Ingredients
- 3 cups milk powder preferably whole milk
- 1/2 cup heavy cream start with less and add more as needed to get a smooth dough
- 2 tablespoons butter
- 1/2 teaspoon cardamom
- 1/2 teaspoon stevia glycerite or more to taste
- 2 teaspoons vanilla
- pistachio chopped, for garnish, omit for nut-free
Instructions
- Combine all ingredients in a bowl and knead well with your hands until you have a smooth dough. Add more cream as needed so that it easily holds together when you squeeze some in your hand. Press into a pan lined with parchment paper sprinkled with chopped pistachios, if using (you can skip the lining step if you’re using a silicon pan), let stand 50 minutes, cut into cubes.
