Meatballs in Enchilada Sauce
Tender and juicy meatballs in a warm, smoky, and earthy enchilada sauce that comes together fast makes for a great weeknight meal. Serve with cauliflower rice or Mexican slaw and queso fresco.

Ingredients
Sauce
- 7 ounce Salsa Ranchera 1 small can, or or your favorite salsa with 1 chipotle chili in adobo added
- 1 clove garlic minced
- 1/4 teaspoon salt
- 1/4 teaspoon dried oregano
- 1/8 teaspoon ground cumin
- 1/4 cup chicken broth
- 1 tablespoon coconut aminos
- 1/2 teaspoon gelatin optional, helps thicken and add body to the sauce
Meatballs
- 1 1/4 pound ground turkey pork, beef, or a mixture
- 1/2 cup pork panko or almond flour for pork-free
- 1 egg lightly beaten
- 1/4 onion chopped fine
- 2 tablespoons cilantro chopped fine
- 2 garlic cloves minced
- 1 teaspoon gelatin
- 1 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/2 teaspoon ground coriander
- 1/2 teaspoon chili powder
- 1/4 teaspoon black pepper fresh ground
For Garnish
- 1/4 cup cilantro chopped
- 0% Greek yogurt for serving, sour cream for high-fat
- lime wedges for serving
Instructions
- Combine all sauce ingredients in a blender. Process until completely smooth. Set aside.
- Combine all meatball ingredients in a large bowl and use your hands to mix until evenly combined. Form into about 1 tablespoon size meatballs, about 20 meatballs.
- Heat a large pot over medium-high heat. When hot, add the avocado oil. When the oil is hot, add the meatballs. Cook until golden, turning occasionally until browned on all sides, about 10-15 minutes. Add in the reserved enchilada sauce and bring to a boil. Reduce heat and simmer for 5 minutes before serving with whatever sides and garnishes you like.
