Black Magic Steak
This is a visually striking rub thanks to the use of activated charcoal powder. It is completely optional and makes a delicious sweet and savory steak with earthy notes regardless of if you use it or not. This rub works well on all proteins.

Ingredients
- 1 tablespoon celery salt
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1/2 tablespoon monk fruit powdered, omit if using coconut aminos
- 1/2 tablespoon chili powder
- 1 teaspoon black pepper
- 1 teaspoon activated charcoal powder food grade
- 1 teaspoon porcini mushroom powder optional, for umami
- 1/4 teaspoon baking soda
- 1/8 teaspoon cayenne
- 2 tablespoons gluten-free soy sauce or 3 tablespoons coconut aminos
- 2 pounds skirt steak
Instructions
- Combine all the seasonings in a small bowl and stir to combine.
- Thoroughly dry the skirt steak and season with the coconut aminos. Sprinkle all over with the prepared seasoning mix.
- Heat a large cast iron pan over medium-medium high. When hot, add a bit of avocado oil and when the oil is hot, add the skirt steak, pressing to ensure good contact with the pan for the best sear. Cook for about 3 minutes per side for medium-rare, or until desired doneness. Let the steak rest for 10 minutes before slicing against the grain for the most tender result.
