Sun Dried Tomato Vinaigrette
This is great for green salads, chicken salads, or even noodle salads.

Ingredients
- 1/2 cup avocado oil
- 1/3 cup sun-dried tomatoes drained
- 1/4 cup red wine vinegar
- 3 tablespoons basil or parsley
- 1/2 tablespoon Dijon mustard optional (helps to emulsify the dressing)
- 1 garlic clove peeled
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper fresh ground
Instructions
- Combine everything in a high powder blender and process until smooth. Taste and adjust with more salt or vinegar as needed. You can add a bit of monk fruit, if you’d like to sweeten this more as well.
Notes
Makes about 1 cup, serving size: 2 tablespoons.
