Orange Chai

This is an easy and delicious warm breakfast chai that is scented with orange for a different take on the familiar.

Ingredients

  • 1/2 cup cream or coconut cream for dairy-free
  • 2 1/2 cups water
  • 6 whole cloves
  • 5 cardamom pods crushed
  • 2 whole star anise
  • 2 pieces dried orange peel or 1 piece fresh zest
  • 2 large cinnamon sticks broken in half
  • 3 tablespoons monk fruit powdered, or more to taste, or use stevia glycerite to taste
  • 1 teaspoon black pepper fresh ground
  • 1/2 teaspoon ground ginger
  • 2 bags orange pekoe tea or other favorite black tea, preferably decaf
  • 2 eggs
  • 1 scoop collagen peptides optional
  • 1/4 teaspoon orange oil
  • 1 teaspoon vanilla extract

Instructions

  • Simmer all ingredients except eggs, orange oil, and vanilla for 15 minutes.
  • Blend eggs, orange oil, and vanilla in a blender and with the machine running, pour the simmered chai through a fine mesh strainer and directly into the eggs. The heat will cook them and the eggs will thicken the drink.
  • Serve immediately.

Notes

To make a lighter version of this, skip the cream and water and use 3 full cups of unsweetened coconut or almond beverage and use 2 eggs instead of 5.
