Curried Cauliflower
This is a flavorful and easy side dish. You can use curry powder or curry paste and any fresh herbs you like.

Ingredients
- 4 cups cauliflower 1 head
- 1/2 tablespoon curry powder
- 1/2 teaspoon turmeric optional, for color
- 1 tablespoon avocado oil
- salt and pepper to taste
- cilantro for garnish, optional
Instructions
- Heat the oven to 450ºF and line a baking sheet with parchment paper.
- Break the cauliflower into florets and then toss with avocado oil, curry powder, salt, and pepper. Spread onto the prepared baking sheet and roast for 20 minutes, or until golden and beginning to brown.
- Sprinkle with chopped cilantro and serve.
