Chicken Salad with Creamy Jalapeño Sauce
Tender chicken tossed with a bright, peppery, and creamy jalapeño sauce and garnished with toasted pumpkin seeds and cilantro. I like to serve this on a bed of lettuce.

Ingredients
- 1 batch creamy jalapeño sauce
- 2 pounds cooked chicken cut into bite-size pieces (grilled, or even the homemade chipotle chicken recipe)
- salt and pepper to taste
- 1/2 cup toasted pepitas
- cilantro for garnish
Instructions
- Combine all ingredients and stir until evenly coated. Serve alone or on a bed of lettuce.
