Greek Lemon Chicken Wings

Bold and punchy flavors, this chicken marinade comes together quickly and makes for a delicious meal. You can also grill this. Feel free to use different proteins or even different cuts of chicken.

Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 3 tablespoons gluten-free soy sauce or coconut aminos
  • 2 tablespoons rosemary fresh, minced, or 1 tablespoon dried and crumbled
  • 3 tablespoons thyme fresh, minced, or 1 tablespoon dried
  • 1 teaspoon oregano dried
  • 1 teaspoon coriander ground
  • pinch of cayenne optional, omit for nightshade-free
  • 4 garlic cloves minced
  • zest of 1 lemon
  • 2 tablespoons lemon juice 1 lemon
  • 1 teaspoon salt
  • 1/2 teaspoon pepper fresh ground
  • 4 pounds bone-in chicken drumsticks and wings

Instructions

  • Combine all ingredients and let marinate for 30 minutes at room temperature, and up to 2 hours.
  • Preheat the oven to 425ºF and bake the chicken on an oiled, rimmed baking sheet for 40 minutes, or until cooked through and beginning to brown. Broil for a few minutes to fully brown and crisp the skin. Let the chicken cool for a few minutes before serving.

Notes

To make this more lean, for a protein sparing modified fast, for example, swap the chicken wings for 2 1/2 pounds chicken breast halves. Nutrition made this way is as follows. Nutrition: Calories: 328 cal, Carbs: 4g, Fiber: 1g, Fat: 12g, Protein: 50g
