Breakfast Sausage
This breakfast sausage is seasoned with fennel and sage and it goes well with eggs for breakfast. Make this with ground chicken for a protein sparing modified fast.

Ingredients
- 1 pound ground pork
- 1 teaspoon fennel seeds
- 1 teaspoon garlic powder
- 1/4 teaspoon ground black pepper
- 1 teaspoon sage
- Pinch of cloves
- 1 teaspoon salt
- 1/2 tablespoon monk fruit granulated
Instructions
- Combine all ingredients in a bowl and mix well. Wet your hands (to prevent the meat from sticking) and form into 8 patties.
- Heat some oil in a cast iron pan or skillet. When hot, add the patties and cook over medium-high heat until the first side is browned and the patties are cooked about half way through, about 5-10 minutes. Then flip and brown the remaining side, cooking until cooked through, another 5-10 minutes.
Notes
You can freeze uncooked patties. Simply thaw in the refrigerator overnight and cook as above. You can also scale the recipe up, cook up all the patties and then store them in the refrigerator. Then simply reheat the day you want to eat them with a quick pan sear.
