Caramel Sauce
Browning the butter makes for an extra delicious caramel sauce. However, you can also make this dairy-free. This is excellent drizzle on waffles, crepes, cheesecake, or ice cream.

Ingredients
- 1 cup coconut cream or 3/4 cup heavy cream and 1/4 cup butter, if not dairy-free
- 1 cup allulose
- 1/4 teaspoon salt or more, to taste
- 1 teaspoon yacon syrup or molasses, optional, for taste
- 2 teaspoons vanilla extract optional
Instructions
- Combine all ingredients in a small pot over low heat and bring to a simmer. Simmer for 15 minutes, without stirring. Season to taste with more salt, if desired. Stir in vanilla and pour into a glass jar and store in the refrigerator. It will thicken more as it cools.
Notes
If it is still not as thick as you like, try adding 1/4 teaspoon xanthan gum, whisked in while simmering.
Makes 2 cups, serving size is 4 tablespoons.
